About this place
The broth delivers a direct, heavy punch from the first sip, balancing the deep richness of pork bones with the sharp clarity of soy sauce. Anchoring each bowl at Daikiya are medium-thick noodles sourced from Sakai Seimen, which hold their own against the dense soup. Their chewy, springy bite pairs naturally with the rich tonkotsu-shoyu broth alongside traditional toppings like nori seaweed and fresh spinach.
Among the toppings, the fragrant smoked chashu stands out. The aromatic woodsmoke pairs well with the weight of the broth, and the generous slices of pork provide a satisfying, hearty bite. For a crisper contrast, diners can customize their bowls with additions such as crunchy Kujo green onions to shift the bowl's overall balance.
Another signature feature is the 100-yen rice bar, which can be ordered alongside any noodle dish. Set up as an all-you-can-eat, self-service station, it allows guests to tailor their bowls of rice with tabletop seasonings such as seasoned garlic, grated ginger, or chili bean paste. Wrapping a mouthful of rice in a sheet of nori thoroughly soaked in the rich broth is one of the shop's classic pleasures.
On weekdays, doors open early at 7:00, providing an inviting option for a morning ramen fix. Inside, seating is arranged entirely along a counter, and orders are placed using a ticket vending machine that accepts cash. Operating continuously through late hours, the shop works equally well for an energizing breakfast bowl or a hearty meal after a long workday.
